Summer Recipe: Roasted Cauliflower Steaks

I've decided to do some Summer Recipes leading up to Summer so we can all be armed with awesome healthy recipes to get us through my favorite season!

There is something about longer days and warm summer nights. I feel like I come more alive during the Summer. I always refer to myself as a "Tropical Being". I love love love, the sun, warm breezes, warm ocean water, that feeling you get after being outside alllll day and you are tired, happy, toasty & smell like sand + coconuts.

I'm always drawn to light, ultra fresh recipes in the Summer and this is one of my go-to's.

Roasted Cauliflower Steaks with White Beans: super quick and easy to make & the flavors of Cauliflower + Roasted Garlic, fresh Parsley + Lemon & juicy Cherry Tomatoes is so perfect. YUM!

Roasted Cauliflower Steaks

INGREDIENTS:

-1 Can White Beans

-1 Head Cauliflower

-1 Bunch Parsley

-1 Head Garlic

-2 Tablespoons Lemon Juice

-2 Tablespoons Olive Oil

-1 Cup Cherry Tomatoes

-Handful Olives of choice or pre-made Olive Tapenade( If you aren't into Olives it's totally fine to leave this out) I got my Tapenade from my fave, Trader Joe's.

-Optional Crusty Bread & Feta Cheese


METHOD:

Pre-heat oven to 415f. Cut your Cauliflower in 1/2 and then cut 2 inch thick "steaks" out of it. Some of them may crumble a bit but that's OK. Lay them flat & any crumbly bits on a foiled pan. Drizzle with 1 Tblspn Olive Oil & sprinkle with Salt + Pepper. Use your hands to rub the oil + spices to all areas of Cauliflower.

While oven heats, peel whole Garlic head & add to a separate foiled pan along with halved Cherry Tomatoes. Drizzle the rest of your oil & sprinkle with Salt + Pepper.

Put Cauliflower pan +Garlic & Tomatoes into the oven for about 15-20 min or until your house smells like an Italian Nana & the Cauliflower is nice and browned.

In the meantime, rinse & drain White Beans. In a large bowl toss together Beans, handful of coarsely chopped Parsley, Lemon Juice & Olives if you are using them.

Remove items from the oven. Add roasted Garlic + Tomatoes to the White Bean mixture. Pace Cauliflower "Steaks" on a platter and top with White Bean mixture. Top with extra Parsley & ENJOY!


This is great as a main dish or as a side dish. I like this recipe because its super easy to adapt it to your personal tastes. You can switch up the herbs, add onions to roast, add different spices or you can use it all as a toast toppings and oh you can add Avocado! I can not believe I haven't tried that yet.
