Summer Recipe: Watermelon Ice Cream
This might be my favorite Watermelon treat (aside from just raw Watermelon in a bowl) to have in the summer.
It is fairly versatile, you can top it with whatever you like. I chose Passion Fruit I picked myself & some fresh Mint. It is also amazing with Coconut chips & fresh Berries or fresh Mango. You get the idea.
INGREDIENTS:
-1 Can Full Fat Coconut Milk
-Frozen Watermelon Cubes
-Assorted Toppings. Passion Fruit/Coconut Shreds/Berries/Mint etc.
METHOD:
You need your Watermelon to be frozen so I usually cut mine and freeze the night before.
Once you have frozen Watermelon chunks, add whole can of Coconut Milk to a food processor or high speed blender. Add Watermelon Chunks & blend/process until it starts to come together.
You want it to be fairly thick (unless you are going for a Watermelon shake, which is actually really good) so if you need to add extra frozen Melon or a bit more liquid if its too thick.
Once blended well transfer to a freezer safe container. A loaf pan lined with parchment works great! You can scoop and serve with desired toppings or store in the freezer until ready.
Pro Tip: Use this to make a Kombucha or Champagne float & topping with edible flowers for an amazing party dessert~
Try to not eat it all in one sitting. It ain't easy folks.
