Kale & White Bean Soup
This soup has just a handful of ingredients and is always delicious! Stores great in the fridge and freezes well too so you can make it ahead of time and save it.
-2 cans White Beans- Rinsed and drained
-2 heads Dino Kale aka Lacinato Kale (any hearty green will work too) roughly chopped
-4 cloves Fresh Garlic- Minced
-Sea Salt & Pepper to taste
-4 Cups Veggie broth
-Fresh Parsley- Chopped
Heat a little Olive Oil in a large pot. Add Garlic & cook 1 min till fragrant & browning.
Add rinsed & drained White Beans + Vegetable Broth & bring to a simmer. Simmer 5 min. Add Kale, Salt & Pepper to taste. Stir & let simmer 5 min.
Remove from heat & top as desired!
I top mine with Fresh Parsley, a dollop of Majestic Garlic & homemade croutons (which is just bread, diced & drizzled with Olive Oil + Garlic & broiled in the oven for 5 min).
