Quick Coconut Granola
- 3 C Gluten Free Oats
- 1 C Walnuts (coarsly chopped)
- 1/2 C Coconut Shreds
- 1/4 C Coconut Sugar or Brown Sugar
- 1/4 C Honey or Maple Syrup
- 3 Tblspn Coconut Oil (melted)
- 1/4 Tspn Sea Salt
-1/2 Tspn Vanilla Extract
-1/2 Tspn Almond Extract
Pre heat oven to 350.
Mix Oats, Walnuts, Sugar & Salt in a large bowl. In a separate bowl mix Vanilla & Almond extracts + melted Coconut Oil + Honey/Maple Syrup.
Add wet to dry and mix thoroughly. Spread mixture out on baking sheet lined with parchment paper or a silicone mat.
Bake for 5 min. Stir and redistribute evenly on the pan & bake another 5 min or till edges are browned.
Remove from heat and sprinkle in Coconut Shreds & stir. Redistribute evenly to pan & let cool completely.
Break into chunks and store in an airtight container.
