Sage + Veggie Pot Pie Soup
Got a request for actual Pot Pie and didn't feel like rolling out dough for crusts. So, I opted to try making it into soup & it turned out stunning!
-One Onion, chopped
-3 Cloves Garlic, minced
-One Potato, diced
-1/2 head Broccoli, chopped
-2 Carrots, diced
-2 stalks Celery, diced
-Handful fresh Sage, chopped (reserve some for garnish)
-8 C veggie broth - I used the boxes from Trader Joe's
-Salt & Pepper to taste
-1/4 Vegan Butter
-4 Tblspn Flour
-1/2 C Almond Milk
Drizzle Oil in pan and heat. Saute Onion, Garlic, Broccoli, Carrot, Celery & 1/2 Sage. Cover for 5 -8 min, stirring. Add veggie broth, rest of the the Sage + dash Salt & Pepper. Cover and let simmer.
In a separate sauce pan melt the Butter & mix in flour. Stir constantly 2 min before slowly whisking in milk to create a thick, creamy consistency.
Combine the two mixtures and stir well. Simmer more till veggies are desired consistency. (If your soup is too think, add hot water)
Serve while hot & garnish with fresh Sage. I made Biscuits from Trader Joe's to go with this and it was awesome!
